The Course
The cooking course is a luxury break and opportunity to visit La Mirage Garden Hotel & Spa, located in the small town of Cotacachi in the Imbabura Province, a two and a half
hour drive north of Quito, the Capital of Ecuador.
This particular region of Ecuador is probably the most scenic one and since Ecuador is the Land of the Sun, you will enjoy eternal springtime every month of the year.
On this relaxing break, a small group of no more than 10 people will gain an insight into the cultivation and production of corn, quinoa, sugar cane, herbs and many other products which we daily use in the preparation of food.
Venues for lunch and dinner have been carefully chosen to give you the wonderful flavor of different cooking styles and techniques using ingredients from the region.
You will try local specialties for which La Mirage is famous along with a range of fine Ecuadorian and South American wines and spirits.
Set in a beautiful countryside, you will learn more about Ecuadorian cuisine and preparation by actively participating at this hands-on lively 3-hour cooking class during
the 4-days of your stay.
We will share our secret recipes in the preparation of a variety of
appetizers, soups, main courses and desserts.
The classes take place in the kitchen of our Garden Restaurant Colibri, facing the main garden, where you also will enjoy the delicacies you have been preparing under the leadership of our chefs.
The cooking class is conducted by professionals who take great pride in extending their knowledge to those interested in the basic commitments of local Ecuadorian and International Cuisine.
Jorge Espinosa of the LA MIRAGE GARDEN HOTEL & SPA was trained as a Chef at the famous Hotel Training School in Bad Reichenhall, Bavaria, Germany. He then added further to his culinary skills and knowledge by working his apprenticeship in several notable
hotels throughout the world.
In 1986 he went on to realize his dreams and ambitions by creating the now world wide known La Mirage Garden Hotel & Spa in Ecuador, his native country. La Mirage is the only
member of the International Association of Relais & Chateaux in this country since 1997.
His years of dedication, his personal involvement in all aspects of the hotel business and superb culinary pride has created what can only be described as one of the best hotel & restaurant experiences you could ever wish for.
Jorge will be ably assisted by the top chefs employed at La Mirage.
The classes will be held during four mornings of your stay between 9 AM and Noon. You will be provided with aprons, the necessary tools and all required ingredients to participate in the hands-on cooking. All prepared dishes will be sampled and shared among the participants.
At the end of the Cooking & Adventure you will be provided with a certificate.

Schedule:
Day-1
Sunday: Arrival in Quito International Airport (Mariscal Sucre) and transfer to
La Mirage, your luxurious accommodation for the next 7 days.
Day-2
Monday: Rest and Orientation.
Day-3
Tuesday: Morning class, lunch and afternoon visit of the Sumac Farm - organic food production.
Day-4
Wednesday: Morning Class and afternoon visit to the famous Indian Handicraft Market in Otavalo and weaving in Peguche.
Day-5
Thursday: Morning class, lunch and afternoon shopping experience for leather goods in Cotacachi.
Day-6
Friday: Morning class, lunch and afternoon visit to the nearby Condor Park.
Day-7
Saturday: Train ride from Ibarra to Salinas with lunch.
Day-8
Sunday: Return to Quito with a visit to a local winery and lunch prepared by students of the University.
Check-in at a comfortable Bed & Breakfast for overnight stay.
Enjoy a farewell dinner at popular local restaurant.
Day-9
Monday: Transfer to airport and departure home.
